Peanut Butter Cookie Recipe
My son has the best time when he is helping me cook. By far, his most favorite thing to make is his grandma’s peanut butter cookie recipe. The best peanut butter cookie recipe, as far as he is concerned. As I’ve mentioned in other posts, my little guy is on the autism spectrum, which makes me an autism dad; and that’s a cool identifier . So trying to find outlets for him to be creative and engaged is always a priority. It just turned out that, like his dad, he loves to cook! What a blessing for our family it is.

Ingredient list

- flour
- butter
- sugar
- brown sugar
- baking soda
- egg
- salt
- vanilla extract
Since this recipe requires a lot of mixing with a mixer (#Commissions Earned), and rolling, and beating, and placing on the sheet pan, it’s perfect for gross motor skills. And getting (mostly) precise measurements helps with fine motor skills. As you’ll see in the video below, my little guy attends to the task at hand very well. Cooking is so therapeutic.

Ingredients
1/2 cup peanut butter
1-1/4 cup flour
3/4 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1 stick unsalted butter
1 large egg
1/2 cup brown sugar
1/2 tsp vanilla extract
Directions
- Let the butter and egg come to room temperature.
- Whisk flour, baking soda and salt in a mixing bowl. Set aside.
- In a mixer, beat the butter and sugars until fluffy.
- Add peanut butter, egg and vanilla. Beat on high until well incorporated.
- Turn mixer to low and slowly add the dry ingredients until dough is smooth and homogeneous.
- Roll 1-inch diameter balls of dough and place on cookie sheet. Make a hatch pattern on each cookie with the tines of a fork.
- Bake for 10 minutes in a pre-heated 350 degree oven.
