How to Make This Simple, Easy Zucchini Boat

I happened to be watching cooking program one Saturday afternoon and the chef was making these fun-looking boats made of zucchini and serving a shrimp mousse in it. And it occurred to me that this would be perfect for serving, well … almost anything. Because the boat itself is pretty neutral in flavor to begin with, whatever you decide to fill it with will be complemented by the zucchini. And the fact that they are keto-friendly is a double bonus.

To start, just slice off the ends of the zucchini. Cut it in half. Cut the halves in half. Scoop out the seeds to make a boat shape. Fill the zucchini boats with anything you like and serve.

So I decided to use my spinach and artichoke dip (you can find the recipe here). But, you are really only limited by your imagination.

What Else Could you Fill Your Zucchini Boat With?

How about Spice-Rubbed Grilled Shrimp?

Or, what about Buffalo Chicken Zucchini Boats!

Ooohh! How about Smoked Salsa?

So, you see where I’m going here. Fill your zucchini boats with whatever floats your boat! (Pun intended!)

You don’t even have to stop with the zucchini boat as an appetizer. I even served mine as the vegetable for dinner recently.
