I love salsa! Let me tell you, I could put it on just about anything. And homemade salsa beats store bought hands down. The fresh vegetables and cilantro also make it a healthy choice. My recipe has a flavorful twist because the vegetables are smoked with mesquite wood chips. I like to serve it to guests without telling them about the smokey flavor just to see their reactions. This salsa has always been a hit!


Smokey Salsa

Ingredients
2 large tomatoes, halved
1/2 green bell pepper
4 large garlic cloves, peeled
1 jalapeno pepper, halved
1/8 cup fresh cilantro leaves and stems
1 tsp lime juice
Kosher salt, to taste
Directions
- Start grill with indirect heat (2 mounds of coals opposite each other).
- Once coals are ready, place tomatoes, peppers and garlic on aluminum foil and set on center of grill grate.
- Add a handful of mesquite wood chips to each pile of coals and cover grill. Smoke for 10 minutes.
Repeat for an additional 10 minutes. - Combine smoked vegetables and cilantro to a food processor and pulse until desired consistency.
- Add lime juice and kosher salt. Pulse once more.
