Suya Spiced Shrimp with Mango Coconut Cream Sauce

Finding the perfect appetizer to lead your meal can sometimes be challenging and sometmes downright frustrating. However, if you are willing to be bold and adventurous, a West African influenced shrimp dish may be just what you need to get the party started. Suya Spiced Shrimp with Mango Coconut Cream Sauce!

The spice blend used in this dish is called Suya and is popular in many western African countries. It is most often used to flavor skewered and grilled meats. Suya, or Yaji as it is called in Nigeria, is a blended mixture of chiles, garlic, onion, ginger, peanuts and spices. Its versatility as a rub or marinade makes it very tempting to use with everything going on the grill.

To complement the earthy, smokiness of the suya, a mango coconut cream sauce rounds out the flavor with a touch of sweetness.

Grilled suya spiced shrimp with a mango coconut cream sauce.

Ingredients

  • 20 large raw shrimp, peeled and deveined

  • 2 mangoes

  • 1 cup coconut milk

  • 1 tablespoon coconut cream

  • 1 teaspoon salt

  • 0.5 teaspoon white pepper

  • 1 teaspoon garlic powder

  • 2 tablespoon suya spice mix

Directions

  • Add coconut milk, coconut cream, 1/2 teaspoon salt, 1/2 teaspoon white pepper, and 1/2 teaspoon garlic powder to a sauce pan and bring to a simmer. Let simmer for 10 minutes.
  • Add diced mango to the coconut milk mixture and continue to simmer for 5 minutes.
  • Using a stick blender, blend sauce to incorporate the mango. Simmer for 5 more minutes or until sauce coats the back of a spoon. Remove from heat, cover and set aside.
  • Place shrimp in a mixing bowl. Add suya spice mix, 1/2 teaspoon of salt and 1/2 teaspoon of garlic powder. Toss to coat the shrimp.
  • Place 5 shrimp onto each skewer. Grill over white coals for 2-3 minutes each side.
  • Plate the skewered shrimp and apply sauce as desired.
