Making Granny’s Cinnamon Rolls

Well, my little sous chef didn’t want to wait until Granny could come by and make her famous cinnamon rolls with him. So we decided to try to replicate them. And I think we did a great job!

The best part about making these for my little guy is, obviously, the rolling out of the dough. It’s big. It takes up the whole island. So, it’s fun!

The Process

First we soaked our yeast in warm water for a bit to activate it. While that was happening, we melted our butter and milk and set it aside to cool. Next we brought out Big Bertha (the KitchenAid mixer) and prepared to start mixing.

In the mixer, we beat the eggs, sugar, and salt very well before adding the copious amount of flour necessary to make all the rolls we like. Then we turned out the stiff dough onto the island work surface and kneaded in more flour with reckless abandon. Setting the dough into a greased bowl and allowing it to rest gave us time to make the cinnamon filling mixture. Brown sugar, white sugar, cinnamon, nutmeg and mace give our rolls the gooey center that makes us happy!

Once the dough has rested, we rolled it out into a huge rectangle that covered our whole island. We spread butter over all of it and then sprinkled on the cinnamon mixture. Next, we carefully rolled it into a big log and cut the log into even, 2-inch sections. After placing the sections into round pie pans, we let them rest a while.

Finally, we baked them all in the oven at 350 degrees for about 25 minutes. What resulted was awesome! Check them out.

This recipe makes about 30 fantastic cinnamon rolls!

Ingredients

  • 2 packages of yeast

  • 1/2 cup warm water

  • 1 teaspoon sugar

  • 3/4 cup sugar

  • 5 sticks unsalted butter

  • 2 cups buttermilk

  • 3 large eggs

  • 2 teaspoons salt

  • 1 teaspoon baking soda

  • 8 cups all-purpose flour

  • 1 cup sugar

  • 1 cup brown sugar

  • 4 tablespoons ground cinnamon

  • 1/8 teaspoon nutmeg

  • 1/8 teaspoon mace

Directions

  • Soak yeast in 1/2 cup of warm water and teaspoon of sugar. Set aside.
  • Melt butter and milk over low heat. Set aside.
  • Beat eggs, 3/4 cup sugar, 2 tsps salt in mixer.
  • Add flour 2 cups at a time to the mixer to until stiff dough forms.
  • Remove dough from mixer and knead in the remaining cup of flour. Place in greased bowl, cover and let rest for 1-1.5 hours.
  • Make cinnamon mixture: combine 1 cup sugar, 1 cup brown sugar, cinnamon, nutmeg and mace.
  • Roll out dough into large rectangle.
  • Spread butter over surface of dough and sprinkle cinnamon mixture all over.
  • Roll dough into a log. Cut into 2-inch rounds.
  • Place rounds in pie pans. Cover and let rest for 90 minutes.
  • Bake in a 350 degree oven for 20-25 minutes.
